Signature Recipe from Broken Sound Club’s Executive

Chef Jay Prisco: Heirloom Tomato Panzanella Salad

As any host knows, a side salad
can make or break a meal. Here is a
deceptively simple one you can serve
to family and guests with confidence.
Like many in this monthly column of
Boca Club News, it is from the personal
collection of Broken Sound Club’s
Executive Chef, Jay Prisco, and is
presented here with the cooperation of
Clubhouse Manager Ed Cichielo.

Serves 2-4

Ingredients:
3 each Assorted Heirloom Tomato Ed Cichielo
Sliced (Green Zebra, Purple Cherokee,
Ugly Tomato, etc.)
1 pint Heirloom Cherry Tomato cut in half
2 heads Baby Gem Lettuce
1 cup Garlic Croutons
1/2 cup Broken Red Wine Vinaigrette
1/4 cup Sliced Red Onion
Salt & Pepper to taste
Directions: Directions:
Garlic Croutons: Preheat oven to 375 degrees. Mix all ingredients together. Combine all ingredients in mixing bowl until incorporated.
2 Slices Brioche or Challah, Large Diced Place on cookie sheet and toast approximately 8 minutes or
2 Tablespoons Chopped Garlic until croutons are crispy. To assemble:
1 teaspoon Granulated Garlic Season and fan three slices tomato on each plate. Mix 1/2
1Tablespoon Olive Oil Broken Red Wine Vinaigrette: cup red wine vinaigrette with remaining ingredients. Season
Salt & Pepper to taste 1/4 cup Red Wine Vinegar with salt and pepper to taste. Place a small amount on top of
1 Tablespoon Dijon Mustard the sliced tomatoes.
2 teaspoons Chopped Thyme
3/4 cup Olive Oil
